The story of L.E.S.S. Eatery, formerly known as Bistro L.E.S.S., begins behind the scenes of Hertog Jan, which became overcrowded after receiving a third Michelin star and needed to find a more spacious location. In the original buildings, a new concept was born, best described as an expansive culinary tapas bar. At that time, Bistro L.E.S.S. offered a simple yet thoughtful cuisine with Spanish accents, canned fish, and grilled meat.

All fans of Hertog Jan could predict with certainty that L.E.S.S. wouldn't have to wait long to earn a star. This contemporary and welcoming Michelin-starred restaurant is indeed led by the same team that has already earned three sparkling stars. It is a gem, a high culinary level set in a decor that strikes a balance between New York and Tokyo, located on 't Zand square. The message is clear: make your reservation in advance.



The kitchen is surrounded by a U-shaped wooden counter, the perfect spot to witness the culinary action up close. In the middle of the spacious dining room, there is a long communal table, ready to accommodate guests who wish to enjoy some snacks along with a glass of wine. Yes, Less 2.0 is very accessible, and that's a good thing.

Gradually, the focus shifts from Spanish cuisine to a more global perspective, and the dishes become more refined. Chef Gert de Mangeleer sharpens his passion for exotic fragrances and worldly flavors during his numerous travels and collaborative dinners abroad. The new concept at 't Zand in Bruges combines a vibrant atmosphere with the ambiance of a bustling city. L.E.S.S. Eatery, as the restaurant is now called, also serves powerful flavors from the Far East and Central America, often presented in shareable portions for the entire group.

The lunch and dinner menu is a combination of new creations and classic dishes from the previous Less menu. For example, you can still order the 'Steamed bun, pork belly' (€14.50). The 'Sea bass in salt crust' (€79 for two) and the 'Crispy duck salad' (€39 for two) are also featured on the new menu. Some classics, such as the 'Miso chicken', are prepared on a 'robata', a Japanese charcoal grill placed in the center of the kitchen.
